Col del Balt Sanzovo | Codolà | Pet Nat Style Prosecco

Before this 'modern era' of Proseccos made with the Charmat method, Prosecco was made with the ancestral method, like this wine: a second fermentation takes place in the bottle and it is not disgorged, so the wine is on its lees. In France this is known as the Pet Nat method. This results in a white sparkling wine whose aromas and flavors continue to evolve while they are in the bottle. This white sparkling wine has a straw yellow color with lots of fine bubbles and green herb and pear aromas with a hint of lemon zest. It has 0 residual sugar and it tastes dry and clean, with a slightly bitter, lemon rind tasting, finish.

Quercia Scarlatta | Marchese Japo | Organic White Wine

This delicious fruit-forward organic white wine has notable texture and structure thanks to a blend of hard-to-find native varietals from the province of Macerata in Le Marche Italy, a hilly area just to the east of Tuscany not far from the Adriatic Sea. With its complexity of aromas, ranging from melon to saffron, and intensity of flavors you’d be surprised to find out that it is unoaked! Quercia Scarlatta follows a minimal intervention approach to winemaking, using native yeast fermentation in their wines like this Marchese Japo.

Kia ros, meaning 'just in time,' is a delightful expression of a rose wine, or rosato as they say in Italian, made from 100% Nero di Troia grapes. It has a strawberry-like citrus nose and ripe plum and rhubarb taste, this is a pleasant, fruity and balanced rose with a slight saline finish. Fermented and aged in stainless steel. From a small family estate in Northern Puglia in Southern Italy.

Bugno Martino Essentia Pet Nat Dry Lambrusco Natural Sparkling Wine Organic Biodynamic

This is how Lambrusco wine was made in the ‘olden’ days in the Mantua province, refermented in the bottle, Pet Nat style. This organic wine has a deep rich purple color with ruby hue and a light effervescence. Its aromas are complex, with notes of cherry, cinnamon, milk chocolate and almond. It has a pleasant freshness, savoury taste and light tannins. Being on the lees and on the lees, aka ‘Col Fondo’, it lends itself well to aging with its aromas and taste evolving over time. Low in alcohol too!

This organic Sangiovese comes from the well-known Bertinoro vineyards in Emilia-Romagnia, Italy. With a dark ruby color, this easy to drink single vineyard sangiovese has floral and herbal aromas with cherry vanilla and a fruit forward cherry taste with pleasant sandy tannins. It has a long and persistent finish and aftertaste. People love this wine!
